Tikka masala starts as tandoori chicken. Thigh pieces are marinated overnight in yoghurt and spices, threaded onto skewers and cooked in the clay tandoor until the edges char. Only then does the chicken go into the masala gravy, which is built from ground spices, onions, tomatoes, cream and bell pepper.
That first step is the part most people taste and cannot name. The smoke from the tandoor stays in the meat, so the sauce carries a roasted flavour that a chicken piece poached straight in gravy never gets.
Nothing is frozen and nothing is cooked with MSG. Naan dough, dips and sauces are made on site daily, and the spices come from Raj's Spice and Groceries, the Indian grocery next door on Beaumont Street.

Kuldip and Sylvia Sangha opened the counter at 116 Beaumont Street in 1998 after running Flavours of North India in Sydney from 1991. Kuldip was born in Budhlada, Punjab. The dining room was added in 2011 and the business has never been franchised.

If med hot is more than you want, butter chicken, chicken korma and mango chicken are all mild, and a raita at $4.50 to $6.00 takes the edge off any curry.
