Every one of them is made on the griddle or steamed when the order comes in, which is why the kitchen stops making them at 8:30pm even though the doors stay open until 10:00pm. North Indian cooking came first here, the curries, the tandoor breads and the biryani we layer with basmati. Then the south arrived: dosa cooked to order on the griddle, sambar on the side, coconut and curry leaf and tamarind sitting alongside the cream and cashew of the north. Two very different cuisines out of one kitchen, which is not how most Indian shops in Australia are run.
Nothing went on the board because it looked good on a menu. Customers asked for dosa, so it went up, and it stayed because other people kept asking for it. The same is true of utthapam and idli sambar.
A dosa cannot be made ahead and held. The batter goes onto a hot griddle, spreads thin, crisps at the edges and comes off as soon as it is ready. That is the reason for the 8:30pm cut off: after that the griddle is cleaned down for the night.

Kuldip and Sylvia Sangha opened the counter at 116 Beaumont Street in 1998, after running Flavours of North India in Sydney from 1991. Kuldip was born in Budhlada, Punjab. The dining room was added in 2011 and the shop has never been franchised.
