The pastry is rolled on site each day, the potato and pea filling is cooked and seasoned in the same kitchen, and the samosas are folded and fried to order. That is why the corners hold and the shell stays crisp rather than soft.
The same rule covers the rest of the board. Naan dough, dips and sauces are made daily, meat and vegetables are bought fresh rather than frozen, and nothing is cooked with MSG. The spices come from Raj's Spice and Groceries, the Indian grocery next door on Beaumont Street.
